Ingredients

    Meatballs

    1 kg ground beef (2.2lbs)
    3 large eggs
    1/3 cup flaxseed, ground
    1 tsp basil
    1 tsp rosemary
    1 tsp thyme
    1 tsp parsley
    1 tsp black pepper
    1 tsp sea salt

    Sauce
    1 onion, finely diced
    4 stalks of celery finely diced
    4 medium carrots peeled and finely diced
    1 clove of garlic crushed (or more if you prefer)
    400g jar of diced tomatoes (check ingredients and be wary of added sugar)
    170g jar of tomato paste (again be wary of added sugar)
    1 tsp basil
    1 tsp rosemary
    1 tsp thyme
    1 tsp parsley
    1 tsp black pepper
    1 tsp sea salt
    1/2 tsp chilli flakes (optional)

    1 cup cheddar cheese, shredded (omit if dairy free)

Tips

Left over sauce can be frozen or used to make zucchini boats.

Directions

Preheat oven to 350C (175C)

Mix all of the ingredients well. I use my hands, but I you could use a spoon. There’s really no point trying to keep your hands clean because you have to roll them anyway.

Roll into equal sized balls and arrange in an oven proof dish.

Bake at 350F (175C) for 20 mins.

While meatballs are browning in the oven prepare sauce.

Gently brown the onion. Add the garlic and herbs (and chilli). Add carrots and celery and gently fry. Add diced tomatoes and the tomato paste and gently simmer until the celery and carrots are tender. Add in the salt and pepper to your taste.

Remove from oven, cover with sauce and cheese (if not currently dairy free) and bake for a further 15 minutes.

Serving Size: 3 meatballs and sauce
