    3 cups Quick Cooking Oats
    1/2 cup Brown Sugar
    2 tsp Baking Powder
    1/2 tsp Salt
    1 tsp Ground Cinnamon

    2 Eggs, lightly beaten
    1 cup Low Fat Milk (I use 1%)
    1/4 cup Butter, melted

    1 small Apple, with skin and finely chopped
    1/3 cup chopped Peaches (fresh or frozen)
    1/3 cup Blueberries (fresh or frozen)


With the changes I made, this delicious, hearty oatmeal has 232 calories per serving, compared to 322 in the original recipe.
Try changing up the fruit if you prefer different combinations. It adapts easily. It reheats nicely in the microwave, and makes a nice snack as well. I like it served warm with a dollop of Greek yogurt on top.


Preheat oven to 350 F, and coat inside of a 8x8 (or 9x9) inch baking dish with cooking spray.

Combine first 5 ingredients in a large mixing bowl. In a medium bowl, whisk together eggs, milk, and butter. Pour into dry ingredients and stir to combine. Batter will be thick. Stir in fruit and pour into prepared baking dish.

Bake, uncovered, for 35-40 minutes, or until knife inserted near centre comes out clean. Serve hot with additional milk, yogurt, or by itself. Enjoy!
