Introduction

Served with brown rice this is a complete low fat meal and delicious as well. It tastes very like pad thai without all the fat and carbs usually associated with Pad Thai.
The shrimp is optional but if you are not vegan it does add a lot of flavor.

Ingredients

    1 lb. tofu cut in 1/2" slices
    10 med. raw shrimp shelled
    10 med mushrooms sliced
    1 green pepper chopped 1" squares
    1/2 cup chopped onion
    3 cloves garlic minced
    1 egg
    1 1/2 Tblsp olive oil
    2 Tbls. soy sauce
    1 Tbls. thai fish sauce
    2 Tbls. pad thai sauce (avail. at asian grocery store)
    2 Tbls. salted peanuts
    3 Tbls. fresh cilantro leaves chopped

Directions

Have peanuts and cilantro ready.
Heat 1/2 Tbls. olive oil in large pan. Saute the tofu slices until slightly brown on both sides. Add additional tsp. of olive oil if needed . Remove tofu slices.
Put remaining oil in pan. Add onion and green pepper and saute on med heat. When they are beginning to soften add mushrooms and garlic.
Saute 1 minute and add the shrimp.
Saute shrimp i minute.
Push veggies to side and add the egg to center of pan. Let it begin to cook before stirring it and mixing with other ingredients.
Add the soy sauce and fish sauce. Add the pad thai sauce stirring all well.
Slice the sauteed tofu into strips and add to the pan.
Add 3 Tbls. of water and heat 1 minute.
Serve immediately over rice and top with cilantro and chopped peanuts.
Makes 6 servings. The rice is not included in the nutritional info.
