Ingredients


    Ground veal, Private Selection (mbg), 16 oz (remove)
    Spinach, frozen, 4 cup (remove)
    Egg, fresh, whole, raw, 14 large (remove)
    Bacon grease - cooking fat - mbg, 9 tsp (remove)
    Mushrooms, canned, 1 cup (remove)
    Seasonings to taste: pink salt, black pepper, thyme, herbs de provence, granulated garlic.

Directions

preheat oven to 350 degrees F.
Saute veal in bacon grease in oven-proof skillet until no longer pink. Add spinach (thawed briefly via microwave) and mushrooms, heat through. Add spices to eggs; add well beaten eggs to skillet and stir to mix well; continue cooking over medium heat without stirring for 3 minutes.
Transfer to 350 degree oven and bake until well set, about 30 minutes.

Serving Size: makes 8 large servings
