    3 Tbsp. Olive Oil
    4 Tbsp. minced garlic
    1 large onion, chopped
    3 cups fresh spinach
    8 oz. sliced mushrooms
    3 cups shredded cheddar cheese
    salt and pepper to taste
    2 - 9 inch pie crusts
    5 eggs
    1 cup fat free half and half
    salt and pepper to taste


1. Preheat oven to 375 degrees.
2. In medium skillet, heat olive oil. Saute garlic, onion until tender. Add chopped spinach and mushrooms. Salt and pepper to taste. Cook until tender and add half half of the cheddar cheese. Spoon mixture into 2 pie crusts.
3. In a medium bowl, whisk together eggs and half and half. Season with salt and pepper. Pour into pie crusts, mixing with veggie mixture.
4 Bake for 15 minutes. Then, sprinkle the top with remaining cheese, and bake for additional 35 - 40 minutes, or until set in center. Allow to stand for 10 minutes before serving.
