    12 Lamb Cutlets
    4½ tbsp Extra Virgin Olive Oil
    3 Garlic Cloves (Crushed)
    2 Oranges (Cubed)
    150 g Potato (Peeled, diced)
    600 g Canned Cannellini Beans (Washed)
    ⅓ cup Milk
    3 tbsp Fresh Basil (Chopped)
    1½ cup Orange Juice
    ⅓ cup White Wine
    3 tsp Brown Sugar


Boil potatoes in salted water for 10 minutes.
Add beans and boil until potato and beans are tender. Drain.
Transfer to a food processor adding milk gradually. Season.

Brush cutlets with 2 tablespoons olive oil.
Season with salt, pepper & garlic.
Heat 1 tablespoon olive oil in a pan over medium heat adding the lamb.
Cook for 5 minutes either side or until desired. Rest for 2 minutes.

Combine orange juice, cubed orange, wine and sugar in the pan used for the lamb and bring to a simmer.
Cook until thickened to a sauce, about 8-10 minutes.
Serve lamb atop of potato and bean puree with dressing and chopped basil.
