Ingredients

    3 medium size baking potatoes
    1 medium size Sweet potato
    Olive Oil Cooking Spray

    To taste:
    Garlic Powder
    Onion Powder
    Fresh or dried Parsley
    Pepper

    Can add Celery, onion, and baby carrots etc but calories are only calculated for the potatoes

Tips

If you intend to add babycarrots celery or onion to this dish you can add the onion cut into quarters to the potatoes in the beginning. I like to microwave my carrots for 5 minutes then add to the potatoes in the oven after the broil time. Adding raw celery at this time as well if so desired.


Directions

Set oven to normal broil (will cook first 10minutes on broil then switch to a 350 degree oven and baked for additional 20 minutes, maybe more or less.

Wash potatoes, can be peeled if preferred. Cut into preferred size chunks. Line cookie sheet with foil, spray with olive oil cooking spray. Spread veg's across sheet in a single layer. Season to taste. Spray again with olive oil cooking spray.



Serving Size: Makes approx 4-5 1/2 cup servings
