Number of Servings: 12


    3 cups water
    1 vegetable bouillon cube
    5 oz. frozen spinach thawed
    8 oz. fat free sour cream
    2 oz. fat free cream cheese
    13.25 oz. box whole wheat elbow pasta, prepared to package directions
    8 oz. package fresh snowpeas
    1 can extra small artichokes
    1 can garbanzo beans
    1/3 cup feta
    2 oz. walnuts
    3 roma tomatoes, chopped


Boil water. Add spinach and bouillon cube. Lower heat and simmer for 10 minutes. Blend with sour cream and cream cheese until smooth. Combine spinach sauce with pasta, snowpeas, artichokes, feta, and garbanzo beans. Bake at 350 degrees for 20 minutes. Remove from oven -- mix in tomatoes and walnuts before serving.
