    2 Chicken Breasts (cooked and shredded)
    1 cup Onions chopped
    16 oz Fat Free Sour Cream
    1 can Healthy Request Cream of Chicken Soup
    1 can Mexican Rotel
    1 can fat free refried beans
    8 Mission White Corn Tortillas (Super Size)
    2 cups low fat Mexican Blend Cheese


1. In a saucepan, mix together sour cream and soup. Heat through and set aside.
2. Combine the cooked, shredded chicken, Rotel, onions and in a pan sprayed with cooking spray. Heat until onions are transparent.
3. Warm the tortillas until flexible. Spread 1 tbsp of refried beans on tortilla. Then fill each tortilla with about 2 tbls. of the chicken mixture and about 1 tbls. of the cheese. Roll tortilla up and place seam side down in a 9x13 dish sprayed with cooking spray.
4. Pour over the sour cream sauce and top with the remaining cheese.
Bake in a 350 degree oven for about 30 minutes or until heated through.

Top with diced tomatoes. Serve with rice.
