Introduction

I found this recipe in a cooking magazine and changed it up to be a little healthier. I used 1% milk instead of half-and-half and fat-free ricotta. I also used healthier pasta and added smoked turkey sausage and it is fantastic!!! My husband and I really enjoy this dish and I hope you do too!!! Ingredients

    12 oz baby spinach
    2 tbsp extra virgin olive oil
    3 cloves garlic, crushed
    1 cup chopped yellow onions
    1 1/2 cup fat-free ricotta cheese
    1 1/2 cup 1% milk
    Pinch of nutmeg
    1 box (14.5 oz) of Ronzoni Smart Taste Rotini
    4 tbsp fresh shredded parmesan
    One package Jennie-O Lean Smoked Turkey Sausage, chopped

Directions

1. Bring a large pot of water to a boil; add about 1 tablespoon salt.

2. Stack several leaves of spinach at a time and cut them into 1/4 inch strips. You should have about 8 packed cups of shredded spinach.

3. In a large pan, heat the olive oil over medium-high heat. Add the onions and garlic, stirring until softened, about 5 minutes. Stir in the spinach and chopped sausage. Cover and steam the spinach until it's wilted but still bright green, about 5-10 minutes, stirring as needed to cook the spinach evenly.

4. In a small bowl, stir the ricotta, milk and nutmeg until smooth. Add to the spinach mixture and season with salt and pepper. Reduce heat to medium low and simmer for about 5 minutes.

5. Meanwhile, cook the pasta until al dente, about 12 minutes.

6. Reserve 1/2 cup of the pasta cooking water. Drain the pasta and return to pot. Add the reserved water, the spinach mixture and the parmesan cheese. Stir to coat the pasta. Serve immediately.
