Ingredients

1.5 lbs chopped yellow potatoes diced in 1/2 inch cubes
3 tbsp olive oil
1/2 tsp salt
1 bunch thin asparagus cut in 1 inch pieces (woody ends chopped off)
1/2 c green onions chopped
dressing
1 small avocado (1/2 cup)
2 Tbsp fresh dill minced
4 Tsp lemon juice
1 green onion chopped
1/4 Tsp salt
1/4 c water
Directions
Preheat oven to 425. Line large baking pan with parchment paper. Peel and dice potatoes laying on pan in single layer. Drizzle with 1.5 tsps of olive oil. bake for 15 minutes
Take pan out of oven and turn over potatoes. Put back in for 20 more minutes ADDING the asparagus to the plan when 15 minutes is remaining.
For the dressing, blend all ingredient together in a food processor.
Once potato pan is done,add all ingredients into a large bowl, stir well and serve warm.
Serving Size: makes 4-1 cup servings
