Ingredients

1 cup whole wheat flour
1 cup all purpose white flour
1 tablespoon of baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup non fat skim milk
2 whole large eggs
1/4 cup vegetable oil
1/2 cup honey
1 cup chopped apples (usually it take two medium apples to make 1 cup chopped apples)
Spray oil for muffin tins
1 teaspoon brown sugar
1 teaspoon ground cinnamon
Directions
Preheat oven to 375 degrees Fahrenheit or 190 degrees Celsius. Lightly grease 2 12-cup muffin tins.
In a medium bowl, mix flours, baking powder, salt and 1 teaspoon of ground cinnamon. Mix with a wooden spoon.
In a separate bowl beat slightly, milk, eggs, oil, honey and apples. Combine the two mixtures in the larger bowl and mix until just mixed, do not beat. Using a large spoon, place mixture in each greased muffin tin. It should be about 3/4 full. After all the tins have the mixture, combine the brown sugar and cinnamon and then sprinkle a little on each muffin. Bake for about 20 minutes or until you see the edges getting slightly brown. Let cool for about 5 minutes and then carefully remove each muffin to a cooling rack and cool. Sometimes you have to run a butter knife all around the outside of the muffin to remove it better.
