    2 eggs
    2 Tbsp diced zucchini
    2 Tbsp diced mushroom
    1 Tbsp diced tomato
    2 tsp mozzarella cheese
    Salt Substitute and pepper, to taste


Blend two eggs in small bowl, add to heated pan and let set. Add vegetables to one side, sprinkle with cheese. Fold in half and remove from pan. Microwave for 30 seconds on high to melt cheese and cook vegetables.
