    1/4 Cup Almond Flour
    1/4 tsp baking powder
    1/2-3 TBSP Sugar/Stevia blend, Splenda, Swerve or sweetener of choice
    1 TBSP unsalted butter
    2 TBSP Almond butter
    1 large egg
    1/4 tsp vanilla
    1/4 cup blueberries

    For the nutritional configuration of this recipe, I used 1/2 TBSP Stevia/Sugar blend.


You will want to play with the amount of sweetener you use. My first attempt I used 1 TBSP of the sugar/stevia blend and it was too sweet!


Melt butter in 4 or 6 inch ramekin. allow to cool then blend in egg. Add almond butter and vanilla and mix again. Add almond flour amd sweetener, and mix. Then add baking powder and mix again.

Put in microwave for 1 minute (my microwave is very low wattage and it took 2 minutes)

Serving Size: makes 1 muffin
