Ingredients

    1/2 C Red Pepper (diced)
    1/2 C Baby Bella Mushroom (diced)
    4 Med. Green Onions (sliced thin)
    1 C Frozen Spinach (defrosted and drained)
    6 OZ Turkey Ham (diced)
    1/3 C Heavy Cream
    10 Large Eggs

You can change up the veggies and meat for different flavors (nutritional values change).


Directions

Heat oven to 400°, lightly oil 9X13 pan. Layer ham in the bottom. Cook pepper, mushrooms and green pepper in skillet until soft (about 4 min). Layer on top of ham. Add spinach to top of vegetables and sprinkle with cheese. Beat eggs and cream together until well mixed and pour over everything.
Bake for 20-25 minutes until egg is puffy and lightly brown on edges. Take out of oven and cool slightly.
