Ingredients

    1/2 C Red Pepper (diced)
    1/2 C Baby Bella Mushroom (diced)
    4 Med. Green Onions (sliced thin)
    1 C Frozen Spinach (defrosted and drained)
    6 OZ Turkey Ham (diced)
    1/3 C Heavy Cream
    10 Large Eggs

Tips

Refrigerates well in individual portions for the week!

You can change up the veggies and meat for different flavors (nutritional values change).


Directions

Heat oven to 400, lightly oil 9X13 pan. Layer ham in the bottom. Cook pepper, mushrooms and green pepper in skillet until soft (about 4 min). Layer on top of ham. Add spinach to top of vegetables and sprinkle with cheese. Beat eggs and cream together until well mixed and pour over everything.
Bake for 20-25 minutes until egg is puffy and lightly brown on edges. Take out of oven and cool slightly.
