Number of Servings: 4

Ingredients

    -1/2 red onion
    -3 cloves of garlic
    -1.5 lb of ground turkey or hamburger
    -3 cans of chopped tomatoes
    -1 cup of prepared minute rice (We prefer white rice)
    -4 Bell peppers (Red, Orange, Yellow and or Green)
    -1 small can of tomato sauce
    -taco seasoning (either homemade or store bought packet)
    -can of Black Beans (drained)
    - small can of sliced black olives
    - Mozzarella Cheese
    -Parmesan Cheese

Tips

~The taco seasoning adds a bit of spice to the Stuffed Pepper dish.. Use either a little or a lot.

You can definitely "tweak" the recipe to make it healthier. Brown rice instead of white. Ground Turkey instead of Beef. 2% skim milk Mozzarella. Etc.

Directions

Chop 1/2 red onion and 3 cloves of garlic. Add to 1.5lbs of either ground turkey or hamburg. BROWN Burger then DRAIN THE FAT. Next add your taco seasoning along with 1/2 to 3/4 cup of water. While the meat is cooking: Follow the directions on the box of the Minute Rice. 1 Cup of Rice per 1 cup of boiling water. Throw on the lid of the pot, take off heat and let stand for 5 minutes. Fluff with a fork after 5 minutes are up.

Heat oven to 375 degrees.

Take Meat Mixture, Cooked Rice, Black beans (drained), Cans of chopped tomatoes and small can of tomato sauce and cook for a few minutes, making sure you mix well. (this mixture will be called your Spanish Rice)

Take your bell peppers and cut them from the top of the pepper to the bottom (in the middle). (SO now you have 8 halves of peppers) take out the insides of the peppers and discard... (stems and seeds) Line your 9x12 pan with the pepper halves. Stuff the pepper pieces with the Spanish Rice Meat Mixture. Top with your Cheeses and Black Olives. Cook until Cheeses are bubbly and Browned. ((usually about 30-45 minutes depending on your oven))....
