Ingredients

3/4 c pumpkin puree
1.5 c quick cooking oats
1/4 c sugar
1/4 c whole milk yogurt
tbs coconut oil
1 egg
tsp baking powder
1/4 tsp salt
tsp vanilla
1/2-1 tsp cinnamon
Tips
I only had whole milk yogurt... you can use skim milk/yogurt and lessen the calories.
I also used coconut oil, but you can use softenend butter, too.
With the oats, I didn't have quick cooking, so I used Old Fashioned, but put them in my food processor until smooth.
I also did this with the cranberries. (I have toddlers, and they like to pick out chunks, and leave a mess everywhere. If I do this, they eat the entire thing. :) I also figured it'd help distribute the cranberries fairly.)
Directions
heat oven to 350
mix ingredients
drop by heaping TBS full onto parchment paper
cook for 12-15 minutes
let cool for 2-3 minutes on the pan, and remove.
