Ingredients

    Zucchini
    Onions
    Laughing Cow Light Cheese Wedges
    Low Sodium Broth

Directions

Place chopped onions, peeled chopped zucchini and olive oil in pot to saute for 8 minutes. Add broth and let simmer for 20 minutes. Using a hand blender, puree and add salt and pepper to taste. Add water if you prefer for texture.
