Ingredients

    1 kg lean beef mince
    2 medium brown onions, finely chopped
    4 garlic cloves, crushed
    1 large stick celery, finely chopped
    1 large carrot, diced
    1 large red capsicum, diced
    1 medium green capsicum, diced
    1 large zucchini, diced
    100 grams tomato paste
    1 400 gram tin Heinz Big Red Condensed Salt Reduced Tomato Soup
    1 400 gram tin Diced tomatoes
    3 tsp mixed herbs
    2 tsp black pepper
    1 - 2 tsp sugar (can be omitted)

Tips

I find the sugar brings out the flavours in the tomatoes.
You can add so many veggies to this recipe. It's one of the easiest ways for me to get my children to eat veggies.


Directions

Spray a non stick pan lightly with oil.
Brown Onion & Garlic for 2 minutes until fragrant.
Add minced beef and cook until browned.
Add all veggies and cook for 5 minutes until carrots begin to soften.
Add tomato paste, soup, tinned tomatoes, herbs, pepper & sugar.
Let simmer for 30 minutes till cooked.
Serve with Pasta
