Introduction

This is super fast and very tasty. Instead of adding shredded cheese at the end, which is way too high in fat and calories, we top with salsa. It's a flavor explosion. Number of Servings: 1

Ingredients

    1 teaspoon fresh garlic
    1/4c. zucchini, cut in matchsticks
    1/4c. red bell pepper, cut in matchsticks
    2 oz. pot roast ( any lean cut of beef)
    1 large egg scrambled

Directions

Chop your meat and veggies.
Spray the pan with Pam spray, toss in the veggies and garlic.
When they're half cooked, add the chopped meat.
When it's heated through, add the scrambled egg.
Scramble around till it's cooked through.
I top this with salsa.

  • I used cubed steak instead of pot roast. its came good, i made homemade salsa and the flavor from that alone made me forget about adding cheese. Very delicious! - 7/19/08
