    1 c all purpose flour
    3 T + 2/3 c sugar
    1 1/4 t baking powder
    1/2 t salt
    1/4 t baking soda
    1/2 t cinnamon
    1/2 c fat free buttermilk
    2 T unsalted butter, melted
    4 c raspberries
    1/3 c water
    1 T fresh lemon juice


Combine the flour with 3 T sugar in a medium bowl. Add the baking powder, salt, baking soda, and 1/4 t of the cinnamon. Stir in the buttermilk and butter. Mix until a soft, sticky dough forms; set aside.

In a heavy 10 in skillet (preferably cast iron), combine the raspberries, the remaining 2/3 c sugar, the water, lemon juice, and the remaining 1/4 t cinnamon; bring to a boil. Reduce the heat and simmer, uncovered, 2 minutes.

Spoon the dough, by tablespoons, onto the fruit. Cover and simmer until the dough is firm to the touch, 8-10 minutes
