    1 1/2 c yellow cornmeal
    3/4 c all purpose flour
    2 T sugar
    2 t baking powder
    1 1/2 t salt
    1 1/2 c fat free milk
    2 eggs, lightly beaten
    3 T unsalted butter, melted


Preheat the oven to 425. Spray a 9 inch cast iron skillet or a 9 inch round cake pan with nonstick spray.

Combine the corneal, flour, sugar, baking powdder, and salt in a medium bowl. Combine the milk, eggs, and butter in another bowl. Slowly stir the milk mixture into the cornmeal mixture until just combined. Pour the batter into the skillet and bake until the cornbread pulls away from the sides of the pan and the edges brown slightly, 20-25 minutes. Cool in the skillet 10 minutes before cutting into 12 wedges.
