Introduction

This is our go-to for pasta sauce :) This is our go-to for pasta sauce :)
Number of Servings: 2

Ingredients

    1 (340g) bag frozen asparagus
    1 tsp salt-free lemon pepper
    opt. 1 tbs Earth Balance (or other fat, included in calculation)
    1/2 - 1 c cooking liquid

    If you omit the Earth Balance (or other fat), start with 1/2 tsp lemon pepper and adjust to taste.

Tips

Keep sauce in blender jar and pulse just before tossing with pasta.

This is also tasty with a sprinkle of nutritional yeast.


Directions

Steam asparagus per instructions and drain, reserving 1 c cooking liquid.

Roughly chop asparagus and transfer to blender jar. Add lemon pepper, Earth Balance (if using), and 1/2 c cooking liquid; puree until smooth, adding more cooking liquid if necessary or to achieve desired consistency.
