Introduction

This recipe was adapted from a similar "myrecipes.com" recipe that used pork tenderloin instead of ribeye roast. I used home-made, low sugar blackberry jam instead of store bought preserves. I'm sure it tastes great with pork tenderloin but my store was out, so I bought a 3 pound pork ribeye roast and cut it in half for this recipe. Ingredients

    1.5 of pork ribeye roast
    1 TBS olive oil
    1.5 TBS Caribbean jerk seasoning
    1 tsp salt
    2/3 cup of seedless blackberry preserves
    1/4 cup of Dijon mustard
    2 TBS orange juice (or rum)
    1 TBS of orange zest
    1 TBS grated fresh ginger

Directions

Pre-heat grill to 350-400 degrees (med- high heat). Remove excess fat (a thin layer is good) from pork roast

Brush pork roast with oil and rub with seasoning and salt

Grill pork roast, covered with grill lid, 10 minutes per side or until a meat thermometer inserted into thickets portion registers 155. Remove from grill and let stand 10 minutes.

Meanwhile, whisk together blackberry preserves and next 4 ingredients in a small sauce pan, and cook over low heat, whisking constantly, 5 minutes or until thoroughly heated.

Cut pork diagonally into thin slices, arranging on a serving platter. Drizzle with warm sauce.

Serving Size: Makes 6 servings (4 ounces of pork per serving)
