Pork rinds, ground, 1 cup
Cream Cheese, 8 oz
6 Medium eggs (or 3 jumbo)
*2 tsp Italian Seasoning, 3 serving
Garlic powder, 1 tbsp
Mozzarella Cheese, whole milk, 2 cup, shredded
*Spaghetti Sauce, Classico Tomato & Basil, 0.5 cup
Mozzarella Cheese, whole milk, .5 cup, shredded
Mozzarella Cheese, whole milk, 4 oz (sliced)
9 leaves Basil
Cherry Tomatoes, Fresh, 1 Tomato, 10 serving cut in half
Pepperoni, 15 slice (1-3/8" dia x 1/8" thick)
Directions
Beat cream cheese until smooth.
Beat in eggs until completely combined.
In a separate bowl, mix together 1 cup pork rinds, 2 cups shredded mozzarella, and your seasonings.
Pour your wet into the dry. Mix until combined. The batter will be sticky. This is ok.
Place parchment paper on a cookie tray. Spray with non-stick spray. Place batter on cookie sheet and spread out evenly edge to edge.
Bake in oven 425 degrees for 25 minutes.
Pull out of oven and allow to cool for 10 minutes.
Once cooled, add marinara sauce. Spread out evenly. On one half of the pizza, place thin slices of block Mozzarella cheese. Slice 10 cherry tomatoes and place between the slices of cheese. Add fresh basil.
On the other half, sprinkle with 1/2 cup shredded mozzarella cheese. Top with Pepperoni.
Bake an additional 8-10 minutes.
Cut into 12 pieces after the pizza has had a chance to cool and set (approximately 10-15 minutes).
