Ingredients

    2 corn torltillas
    I small can of enchilada sauce
    7 ox. seasoned (any seasoning you prefer- I like taco seasoning and salt and pepper)
    One half package of firn tofu

Tips

You can use any texture of tofu, soft to firm.depending on your preferences. Crumbles seasoned soft tofu or "pan fried" firm tofu. Both work well as long as seasoned properly with salt, pepper or any other seasoning choices. You can also use red enchilada sauce rather than green. Use any cheese or combination of cheeses that you prefer even low-fat cheddar for a lower calorie count.


Directions

Saute seasoned tofu in frying pan.Layer all ingredients. Starting with corn tortillas-tofu-enchilada-cheese-corn tortilla- etc... Bake at 350 degrees for one half hour
