Ingredients

    1 cooked chicken breast, cut into small pieces
    2 cups chopped fresh broccoli
    2 carrots sliced
    1/2 medium onion
    1 stalk celery sliced
    2 Yukon Gold potatoes
    3 white mushrooms sliced
    1 cup water, or more as needed
    1 qt. chicken broth
    1/3 green bell pepper, chopped
    2 tablespoons chopped fresh sage
    1 cup fresh baby spinach leaves
    1 tablespoon chopped fresh oregano
    3 tablespoons chopped fresh parsley
    1 tablespoon salt
    1/2 tsp. pepper

Tips

*If using canned chicken broth, reduce the salt. I used unsalted broth from stewing a whole chicken.

*Thicken with 2 tsp. of xanthan gum for no added carbs. just ladle some broth into a bowl and whisk it in. You will see the thickening immediately. (Be careful not to use too much, just one or two tsp. Start with just one then add it to the pot to see how it looks.)

*Top with a dollop of sour cream for fun.


Directions

Chop up ingredients and simmer 1-2 hours as desired.

Servings: 6 big bowls of soup
