Ingredients

    8 eggs
    1/4 cup milk (I used unsweetened almond milk)
    1/2 tsp oil (I used coconut)
    1/2 tsp baking powder
    salt & pepper

    optional
    bacon (I crumbled 1 slice per muffin)
    shredded cheese
    onion

Directions

~ preheat oven to 375 degrees

~ have all the "extras" prepared (cook bacon/meat, onion, cheese, etc)

~ mix eggs, milk, baking powder & oil

~ grease muffin cups (or use silicon liners)
~ evenly distribute the bacon (or what ever meat you want) evening between the 12 muffin cups
~ evenly distribute the egg mixture between the 12 muffin cups
~ top with remaining extras (onion, cheese, etc)

~ bake @ 375-degrees for 20-25 minutes

Serving Size: makes 12 muffins
