Ingredients



    4 Egg, fresh, whole, raw
    1/2 c. Egg substitute,
    1/4 c. HyVee reduced fat cheddar jack cheese
    1/4 c. Fat-Free Greek Yogurt, Plain, 0.25 cup
    2 tb. fresh Basil,
    3 slices H97% fat free,Smoked Deli Ham
    3/4 c. Earthbound Farm Organic Power Greens,

Tips

Add additional veggies if desired, such as broccoli, zucchini, red or green peppers, etc.


Directions

Mix eggs, cheese, yogurt, basil, salt and pepper to taste in a small blender. Blend until smooth. Put a slice of ham in 3 large ramekins or small microwavable dishes that have been sprayed with oil, or basted with butter. Add about 1/4 c. power greens to each omelette. Bake in microwave on power level 7 about 3-4 minutes, or till firm
