Number of Servings: 8


    4-5 boneless chicken breast
    1 (15 1/2 ounce) can black beans (drained and rinsed)
    1 (15 ounce) can corn (drained)
    1 (15 ounce) jar salsa, any kind
    1 (8 ounce) package light or fat free cream cheese
    1 tsp garlic powder
    1 tsp cumin


Place chicken in slow cooker. Sprinkle on garlic and cumin. Pour black beans, corn and salsa over chicken. Cook on low for 5-6 hours. Open lid and add light or fat free cream cheese. Cover with lid and let the cream cheese melt for 5 minutes. Uncover and stir sauce well. Serve chicken with 2 tablespoons of sauce over the top. Tastes great with brown rice or with whole wheat tortillas. Makes 8 servings.
