Introduction

Ingredients

2 eggs (or 6 egg whites)
1 Cup oats ground to powder
1 Cup low fat cottage cheese blended smooth
1/2 t cinnamon
1/4 t Baking Powder
1/4 t Vanilla Extract
Tips
I prefer to use a small skillet and make two large pancakes. I put one in the freezer and toast when I want it on another day. Be sure to add calories for any added toppings. These will be a darker color and consistency than regular pancake mix.
Directions
Grind oats to a powder in blender.
Blend cottage cheese till smooth.
Add rest of ingredients to blender or blend all ingredients in a bowl. Mix well. Heat a skillet to medium heat. Pour into pancakes and cook till lightly browned both sides. Serve with syrup, butter or any fruit topping.
Serving Size: 2 large pancakes
