    16 oz carton of Egg Beaters Liquid Egg Whites

    1 bag frozen mixed veggies (I used green beans, carrots and corn)

    1.5 cups Frozen Homestyle (cubed) Hash Browns

    4 oz mozzarella cheese, sliced


Makes 8 slices

Prepare frozen veggies and hash browns according to directions on package

Combine veggies and hash browns in a mixing bowl

Pour egg whites into an oven proof skillet and set over medium to medium-high heat

Pour veggie/hash brown mix to egg whites

Cook 3-4 minutes or until egg on bottom of skillet is set

Arrange mozzarella cheese to cover top of mixture in skillet

Put skillet in 350 degree oven for 15 minutes or until egg mixture is completely set and cheese is melted

Set on counter to cool, remove from pan and slice into 8 wedges
