Tasty omelet with Zucchini, Cream Cheese, Onion, Mozzarella Tasty omelet with Zucchini, Cream Cheese, Onion, Mozzarella
Number of Servings: 1

    2 lg Eggs, scrambled
    1 tbsp Cream Cheese
    1/2 c. Zucchini, cubed
    1/4 c. Onion, cubed
1 stick Mozzarella String Cheese (optional)
    1 tbsp unsalted butter
    Garlic salt

1. Melt butter in frying pan
2. Add zucchini and onion to buttered frying pan, sautee until cooked as desired (I usually slightly under cook my veggies so they are still firm)
3. Shake desired amount of garlic salt onto veggies
4. Add cream cheese to frying pan, stir until it's melted and coating the veggies
5. Pour scrambled eggs over cream cheese and veggies
6. Cook eggs as desired (I like to let them get hard and flip them like a pancake, but some people like to stir their scrambled eggs. I think either would work here.)

I peeled the string cheese and laid it over the eggs in a lattice fashion for a little added protein. This is optional.
