This is a basic polenta recipe from Chef Michael Smith (Chef at Home) This is a basic polenta recipe from Chef Michael Smith (Chef at Home)

    I used a 2 full bay leaves (not crumbled) and removed them after simmering the polenta)

    You can substitute the corn for peppers, red onions, chopped herbs etc.


1) Bring chicken broth to a boil and add the cornmeal in a slow steady stream while whisking continuously. Add Bay Leaf and continue whisking. (Pre-heat oven to 350.)

2) Once the polenta begins to thicken, add the frozen corn, parmesan cheese, pepper. Continue whisking until it becomes fairly thick.

3) Spray a loaf pan with cooking spray and pour polenta into loaf pan and bake for 30 mins.

4) Let cool, remove from pan and slice into 8 thick slices and grill on BBQ.
