Introduction

Ingredients

    1 medium yellow onion chopped
    7 garlic cloves, crushed
    7 scallions
    2 TBSP Avocado Oil
    8 Thinly Sliced Chicken Breasts or about 32 oz
    1/4 Cup Flour
    1/2 tsp salt
    1/4 tsp pepper
    3 TBSP butter
    12TBSP or 3/4 cup sherry cooking wine
    12 TBSP or 3/4 c lemon juice
    3 TBSP capers
    1/2 cup chicken broth



Tips

Serving size = about 3.5 oz - 4 oz of chicken breast, or 1 breast and 1/8 of the sauce mixture.


Directions

Saute onions, garlic and scallions in avocado oil until tender. Remove from pan and set aside. Mix flour, salt and pepper and place in a flat bowl. Dip chicken pieces into flour and lightly brown then in butter, about 2-3 minutes per side. Remove the chicken. Add the sautéed onion mixture. Over high heat add the sherry, lemon juice and capers. This should thicken to make a nice sauce for the chicken. If the sauce becomes too thick, add some of the chicken broth. Serve sauce over chicken breast.

Serving Size: about 3.5 oz-4 oz of chicken or 1 breast and 1/8 of the sauce.
