Flourless Protein Berry Muffins (Easy and Gluten Free)
Makes approx. 24 medium muffins
Gluten free*, Low Carb, Low Cal, High Protein

These muffins are not very sweet but can easily be sweetened by adding additional sugar free vanilla or any sweetener of your choice.

Ingredients

    1 cup soy milk
    1 egg
    1 teaspoon vanilla extract
    2 tablespoons sunflower butter
    5 pumps sugar free vanilla

    1.5 cup almond flour
    1 cup Pure ProteinŽ Plus, French Vanilla Flavor
    1/2 cup chia seeds
    2 teaspoons baking powder
    1/4 teaspoon salt

    3 cups frozen blueberries* -bowl mixed berries w/ 4 pumps sugar free vanilla

Directions

Makes approx. 24 medium muffins

Preheat oven to 375

1 cup soy milk
1 egg
1 teaspoon vanilla extract
2 tablespoons sunflower butter
5 pumps sugar free vanilla
-combine and mix separately

1.5 cup almond flour
1 cup Pure ProteinŽ Plus, French Vanilla Flavor
1/2 cup chia seeds
2 teaspoons baking powder oops-2 tablespoons
1/4 teaspoon salt
-combine and mix

Add wet ingredients and fully mix

3 cups frozen blueberries* -bowl mixed berries w/ 4 pumps sf vanilla (optional)
-add berries and pour into sprayed or nonstick muffin tin(s)

Bake for 12 minutes
