Introduction

Ingredients

    1 bunch kale, stems removed
    5 golden potatoes
    2- 3 chicken breasts
    1/3 cup olive oil
    1/4 cup soy sauce
    2 tbsp red wine vinegar
    Juice 1 lemon
    2 tbsp Worcestershire sauce
    1 tbsp parsley flakes
    1 tbsp dijon mustard
    Freshly cracked black pepper, to taste
    4 cloves garlic, minced

Tips

Can substitute spinach for the kale.
Use chicken thighs and/or legs in place of breasts.


Directions

Preheat oven to 425 degrees.
Combine the ingredients of olive oil through the minced garlic in bowl. Set aside.
Tear the kale and place in bottom of 13 x 9 baking dish.
Slice the potatoes and place on top of kale, with the chicken on top of the potatoes.
Stir the sauce well and then pour over the items in the dish.
Cook for 35- 40 minutes.
Spoon the sauce over each serving.


Serving Size: Makes 2- 4 servings
