Ingredients

    16 oz grilled chicken breasts
    1-2 tbsp fresh, grated sweet onion
    1 tbsp lemon juice
    1/2 cup hellmans light mayo
    1/4 cup fage plain, nonfat greek yogurt
    1/4 cup half and half
    salt and pepper to taste
    1/4 cup slivered almonds, toasted
    1 cup of your favorite grapes, halved
    1/4 cup finely sliced celery

Tips

serve as a sandwich with a tiny bit of mustard or on a bed of green with strawberries, apples, and a drizzle of balsamic vinegar.


Directions

start with your favorite chicken. i love it grilled with lemon pepper. or just use left over roasted chicken. when cool, dice and set aside.

combine onion through salt and pepper.

stir in chicken and remaining ingredients.
