Introduction

This is a recipe I found on the discussion boards. It's pretty high fat for my taste and I am going to try making it with half the coconut milk next time. Ingredients

    Quiona, dry, 1 1/2 cups
    Coconut milk, Thai Kitchen, 1 can
    Chia Seeds, 1 T, ground
    Vanilla Extract, 1 tsp

Tips

Use a large flat spatula or knife to press quiona into the mold.


Directions

Rinse quiona thoroughly, place in skillet and stir until dry. Add water and coconut milk and simmer for 15 minutes. Add chia seeds and simmer 5 additional minutes. Remove from heat, stir in vanilla. Pack into 1/2 cup measuring cup as mold, turn out onto parchment paper. Store in refrigerator for up to one week.

Serve with fruit.

Serving Size: Makes 7 1/2 cup (packed) servings
