An easy to prepare chicken salad. An easy to prepare chicken salad.
Number of Servings: 4


    2 cups of white meat from a rotisserie chicken, chopped into small pieces (1/2 in)
    1/4 c. onions, chopped
    1/4 c. seedless grapes, cut into fourths
    1/4 c. snow peas, chopped
    1/4 c. walnuts, chopped
    1 10 ounce package of fresh spinach


Chop everything into small pieces and mix it all together. You can add different ingredients or amounts to taste. Wrap a teaspoon of the chicken salad into 1 or 2 spinach leaves and close with a toothpick. This makes a tasty treat.

You can also wrap the chicken salad in other lettuce leaves or use it in a sandwich.
