    1 tablespoon POM
    Wonderful 100% Pomegranate Juice
    4 6-oz. salmon filets
    2 tablespoons olive oil
    2 tablespoons grainy Dijon mustard
    1 tablespoon cracked black pepper
    1 teaspoon chopped fresh parsley
    1 teaspoon chopped fresh dill
    1 teaspoon lemon zest
    1/4 cup pomegranate arils, to garnish


1. Preheat broiler.

2. Prepare garnish – Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve ¼ cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.)
3. place salmon filets on a greased broiler pan.

4. Brush each filet with olive oil and sprinkle with salt.

5. Mix one tablespoon of pomegranate juice with mustard and cracked black pepper.

6. Spread the pomegranate-mustard mixture on each filet.

7. Mix together parsley, dill and lemon zest to make gremolada. Set aside.

8. Broil filets 4 to 5 minutes per side or until flaky when tested with a sharp knife.

9. Divide gremolada mixture and spread on each filet.

10. Sprinkle 2 tablespoons of arils on each filet.
