Ingredients

4 cups of sliced summer squash
1/2 cup of mild chunky salsa
1 cup plain tomato sauce
1/2 cup bread crumbs, italian seasoned
1/2 cup parmesean cheese
2 slices of provolone cheese
Tips
Next time I am going to try fresh, raw salsa and homemade tomato sauce.
Directions
Mix your squash, salsa and tomato sauce together and place in a small square casserole dish.
Cut the sliced provolone cheese into strips and place on top of the casserole.
Mixed together the bread crumbs and parmesean cheese and then spread on top of the casserole.
Bake in a preheated oven at 350 degrees for 30 minutes.
Serving Size: makes 8 1/2 cup servings
