Ingredients

    6 cups Cauliflower, raw in food processor until couscous texture
    1 cup of Asparagus tips rinsed and dried with paper towel
    6 green onions (scallions) sliced thin
    1 lemon, juiced
    4 tbls sliced or slivered Almonds
    4 tbls chopped fresh Parsley
    1 Garlic Cloves, finely minced
    3 tbls Olive Oil
    2 tsp Bacon grease
    Sea Salt & Fresh Ground Pepper to taste

Tips

This is a great side dish for fish, chicken, beef instead of potatoes or pasta. Low in carb, fat & high in nutrients. Can be eaten warm or cold. Delicious the next day!


Directions

Bring a large pot of water to boil. Meanwhile combine lemon juice, olive oil salt & pepper. set aside. Add cauliflower to boiling water and cook until just tender 2-3 minutes. Drain Well and dry with paper towels. Saute in bacon grease, garlic & asparagus just until crisp tender, 2 minutes. Add lemon juice mixture to "couscous"..add Asparagus & garlic, green onion,parsley & Almonds. Toss lightly, adjust salt & pepper to taste. Garnish with fresh parsley and almonds.

Serving Size: Makes 8 servings approx. 3/4 cup each
