A quick vegetarian meal with no added fats or wheat in it. A quick vegetarian meal with no added fats or wheat in it.
Number of Servings: 4


    Zucchini (Corgette) - 285g sliced
    Onion - 135g chopped
    Parsnip - 105g - chopped
    Potato (red or white) - 145g chopped
    Yam (Sweet Potato) - 285g chopped
    Carrot - 110g chopped
    225g of whisked egg (about 3 eggs)
    pinch of dry mixed herbs


prepare the veg, add all the veg to a saucepan and boil until all is soft (about 10mins)
whilst the veg are cooking whisk the eggs together and add the mixed herbs
Drain the veg, add the eggs, mix quickly and put into a pyrex dish 5" x 7" (approx)
Put into a hot oven (400F, 200C, Gas mark 5)
bake for 30 mins or until brown on top.

Serve hot - or cold with a salad

My serving size was 400g 1/4 of the dish
