Introduction

I fix this when I simply need to go to the store and really don't want to get out. It's not gourmet, but it will keep body and soul together. Serve with a salad. Ingredients

    1 large baking potato, well washed and sliced
    1 cup chopped onion, (I used the frozen chopped onions.)
    1 can baked pork and beans, (I used Lucky's)
    Salt and Pepper to taste

Tips

You can peel the potato or not. You may feel that during the last few minutes of cooking that you should take the cover off. At this time, I have put some cheese on top. Any cheese might do, but I like the really melt-y kind. Also, I have added some barbeque sauce and played around with the different flavored beans, etc.


Directions

In a non stick casserole dish layer the beans, onion, and sliced potato. Cover and bake at 376 degrees until the potatoes are done.

Serving Size: Makes 3 large servings.
