Number of Servings: 2


    1 cup cooked barley
    3 patties cooked sausage, crumbled
    1 can diced tomatoes
    2 bell peppers
    2 oz cheddar


Cut tops off of peppers and remove seeds.
Place peppers in a microwave safe wowl with 1/2 cup water. Cover with plastic wrap. Microwave for 5-7 minutes or until peppers are just getting tender. Remove and let cool slightly. Using aluminum foil make two rings slightly bigger around than your peppers. Place rings in baking dish and stand peppers up in rings.
Mix Barley, tomatoes and crumbled sausage in a small bowl. Season with Salt & pepper if you like.
Spoon mixture into peppers.
Top each pepper with 1 oz. cheese.
Bake at 350 for about 20-30 minutes. You just want to get everything warm and melt the cheese.
(leftover "guts" go well on a bed of lettuce or spinach with a splash of Oil and vinegar the next day for lunch)
