Introduction

Number of Servings: 16

Ingredients

    16 cup (8 fl oz) Water, tap or 4 quarts water
    4 large (7-1/4" to 8-1/2" long) Carrots, raw, chopped
    4 stalk, large (11"-12" long) Celery, raw, chopped
    2 cup, chopped Collards
    1 large red Onion, raw, diced
    2 sweetpotato, 5" long Sweet potato, cubed
    1 cup, cubed Turnips
    1 cup slices Parsnips
    1.50 cup pieces Shiitake Mushrooms, chopped
    2.50 serving Mushrooms, Fresh, White Button, Sliced (3 oz / 85g), equal to 1.50 cups
    .50 cup Parsley
    .50 tsp Salt

Tips

Yes, it is time consuming to chop up all the veggies, but the result is well worth it!


Directions

Put everything into a large soup pot, and bring to a boil. Then turn the heat down, and simmer for 2 hours. Turn the heat off and allow to cool. Then puree either using an emersion blender or a regular blender. This soup is good hot or cold!

    Up the ante by using salt free stock. This is a great way to use up those veggies which are in the best shape!
