I was looking for a colorful dish and a way to use some pork chops. I was looking for a colorful dish and a way to use some pork chops.
Number of Servings: 4


    300g pork chops, diced
    300g frozen spinach, thawed and drained
    150g cherry tomatoes, halved
    227g mushrooms, sliced
    1 large onion, diced
    1-2 tbsp garlic, minced
    0.5 cup fat-free half & half
    1 cup water
    1 tbsp corn starch
    salt, pepper to taste


Spray non-stick pan with cooking spray and fry the pork.

Once the pork starts to turn golden brown, add onions, garlic and mushrooms. Sautee until mushrooms start to brown.

Add spinach, half & half and water. Bring to a boil, thicken with cornstarch.

Add the tomatoes, season with salt and pepper. Let simmer for 10 minutes.

Serve over rice, pasta or potatoes.

Makes 4 1-cup servings.
