Introduction

This is one that came from eMeals.com, but instead of flank steak as stated, I used flat iron steak. Turned our really well, even though I never would've put these ingredients together on my own. Ingredients

    1/2 cup kalamata olives, chopped
    1 red onion, sliced in 1/4" thick slices
    2 tbsp, capers
    rind and juice of 1 lemon
    1.5 lbs flat iron steak
    3 tbsp Extra Virgin Olive Oil

Directions

Bring steak to room temperature before cooking (about 25 minutes on the counter) to prevent it getting tough.

While steak is resting, grill onion slices until tender, turning once carefully to keep the rings from falling in the grill. Chop the grilled onions and set aside.

Rub 1 tbsp oil on both sides of the steak, then season with salt and pepper to taste. Grill steaks until desired degree of doneness. Slice in 1/4" thick slices.

Add chopped onions, olives and capers to a bowl. Zest lemon, then juice. Add remaining 2 tbsp of olive oil and mix well.

Arrange steak slices on platter and top with relish. Serve warm.
