Quick and easy apple cinnamon mini-loaves. Quick and easy apple cinnamon mini-loaves.
Number of Servings: 18


    2 large Egg, fresh, whole, raw
    1.5 cup Granulated Sugar
    2 tsp Cinnamon, ground
    6 medium (2-3/4" dia) (approx 3 Apples, fresh with skin
    2 cup Flour, white
    2 tsp Baking Soda
    .5 cup Canola Oil


Mini-loaves can be frozen and taken out to be used as snacks.


Preheat oven to 350.

In a large bowl, mix the eggs, sugar, cinnamon and oil. Peel and slice the apples and add to mixture in bowl (coating as you go to keep apples from turning brown.)

Mix together the baking soda and flour and add to the ingredients in the bowl. Mix well (best with a fork) until all of the flour is absorbed by the wet ingredients.

Pour mixture into lined mini-loaf pans. Bake for approximately 30 minutes or until a toothpick inserted in the middle comes out dry.

Remove from pans after five minutes and allow to cool before eating.

Serving Size: 9 mini loaves (2 servings per loaf)
